European nights at Anfield may be the stuff of cliches, but they can be magical, mythical affairs. What they have not been is empty occasions, the usual noise and colour replaced by four empty stands. Liverpool’s historic home was last full for a Champions League game, against Atletico Madrid in March. Its next continental clash, against FC Midtjylland, will be altogether quieter.

For Jurgen Klopp, the soundtrack will be different but the aims the same. “We love that competition and still loved the competition when we got knocked out last year, too early,” he said. “It is Europe, it is Anfield, it is the Champions League. No crowd but it is still the competition we love. We will see how far we can go. There are no guarantees but there are opportunities and I like opportunities.”

Mane inspires Liverpool: Premier League team of the week

Klopp’s Liverpool have made the most of their chances, reaching the 2018 final and lifting the Champions League in 2019. They have since claimed the Premier League, but their aura of invincibility was established in Europe. Atletico inflicted Klopp’s first defeat in a two-legged European tie as Liverpool manager and even that came with an asterisk in unusual times.

“People forget that when you lose but we played a really good game in Madrid which we lost 1-0 and played a super game at home which we lost,” Klopp explained. “It sounds crazy, but what more can you do? It was a strange time; the last game before lockdown.”

Midtjylland, in the Champions League group stages for the first time, are not expected to provide such stiff opposition but Klopp has long been intrigued by the Danish club, who share an owner, Matthew Benham, with Brentford, and who have used statistics to propel their rise. During his sabbatical after leaving Borussia Dortmund, he looked to learn from them.

“About five years ago, in my break, I was interested to go for a while to Midtjylland or Brentford to see what they do exactly but then I signed for Liverpool so I couldn’t do that,” he explained. He will not underestimate them. “They will not wave the white flag,” Klopp said. “A lot of things are possible if you think quicker or different to other people. They have all my respect.”

Liverpool have borrowed from Midtjylland in one respect. Their throw-in coach Thomas Gronnemark works with both clubs, though Klopp said he is too professional to divulge any secrets. “Ajax used to work with him,” Klopp noted. “We are the Thomas Gronnemark group, pretty much.”

Liverpool beat Ajax 1-0 last week in their first game without the injured Virgil van Dijk. "Last week was not the best of our lives," said Klopp. "But we can influence the response and I like the response. Every team would miss Virgil van Dijk. He is the best centre-half in the world. He plays pretty much every game for two-and-a-half years and three days later you have to build a new line-up. All the boys play together with Virg but they don't play without him."

Liverpool remain without one alternative in Joel Matip, plus Naby Keita and Thiago Alcantara, so Fabinho will continue in defence. “He is doing really well as a centre-back but we miss a lot Virgil, we cannot deny that,” said Alisson Becker.

The goalkeeper himself has given Liverpool a defensive boost after making a swifter-than-expected return from a shoulder injury against Sheffield United on Saturday. “As soon as the doctor said it was four-to-six weeks, I said ‘No, doc, we go to two or three maximum,” explained the Brazilian. “And he agrees with me and we go for it.”

What is Folia?

Prince Khaled bin Alwaleed bin Talal's new plant-based menu will launch at Four Seasons hotels in Dubai this November. A desire to cater to people looking for clean, healthy meals beyond green salad is what inspired Prince Khaled and American celebrity chef Matthew Kenney to create Folia. The word means "from the leaves" in Latin, and the exclusive menu offers fine plant-based cuisine across Four Seasons properties in Los Angeles, Bahrain and, soon, Dubai.

Kenney specialises in vegan cuisine and is the founder of Plant Food Wine and 20 other restaurants worldwide. "I’ve always appreciated Matthew’s work," says the Saudi royal. "He has a singular culinary talent and his approach to plant-based dining is prescient and unrivalled. I was a fan of his long before we established our professional relationship."

Folia first launched at The Four Seasons Hotel Los Angeles at Beverly Hills in July 2018. It is available at the poolside Cabana Restaurant and for in-room dining across the property, as well as in its private event space. The food is vibrant and colourful, full of fresh dishes such as the hearts of palm ceviche with California fruit, vegetables and edible flowers; green hearb tacos filled with roasted squash and king oyster barbacoa; and a savoury coconut cream pie with macadamia crust.

In March 2019, the Folia menu reached Gulf shores, as it was introduced at the Four Seasons Hotel Bahrain Bay, where it is served at the Bay View Lounge. Next, on Tuesday, November 1 – also known as World Vegan Day – it will come to the UAE, to the Four Seasons Resort Dubai at Jumeirah Beach and the Four Seasons DIFC, both properties Prince Khaled has spent "considerable time at and love". 

There are also plans to take Folia to several more locations throughout the Middle East and Europe.

While health-conscious diners will be attracted to the concept, Prince Khaled is careful to stress Folia is "not meant for a specific subset of customers. It is meant for everyone who wants a culinary experience without the negative impact that eating out so often comes with."
