SAO PAULO // When Alejandro Sabella was handed the task of reviving Argentina’s fortunes after a poor campaign at the 2011 Copa America, not everyone in his homeland was convinced he was the right man.
“I don’t know why they chose him,” said Cesar Menotti, who coached the team to the 1978 World Cup.
“I don’t know what his project is.”

Three years later, Sabella’s appointment looks like a stroke of genius by his bosses at the Argentina Football Association, as the team prepare for their first World Cup semi-final since 1990.
Under Sabella, nicknamed “The Magician” during his playing days, Argentina have developed into a formidable side that is again among the elite.
They may have won all their matches by one-goal margins, but they have shown a mental strength that was lacking four years ago under Diego Maradona.
Some say the team relies too much on four-time World Player of the Year Lionel Messi, but if that is the case, it proves that Sabella made the right decision when he swiftly installed him as captain.
Unlike some of his predecessors, Sabella has not hesitated to tailor his team to make the most of Messi’s talents.
The results have been spectacular, with Messi for the first time consistently producing four goals in the finals.
“He’s the water in the desert. He finds solutions when we think there aren’t any,” said Sabella, whose rise to the top job in Argentinian football was a long time in the making.
He worked as an assistant to Daniel Passarella for several years, and was part of the Argentina staff at the 1998 World Cup.
However, it was not until Sabella was appointed Estudiantes manager in early 2009 that his career took off.
Within months, he guided them to the Copa Libertadores title, and followed up by taking the 2010 Apertura championship, effectively making him a shoo-in for the Argentina job in 2011.

• Founded in 2014, Telr is a payment aggregator and gateway with an office in Silicon Oasis. It’s e-commerce entry plan costs Dh349 monthly (plus VAT). QR codes direct customers to an online payment page and merchants can generate payments through messaging apps.
• Business Bay’s Pallapay claims 40,000-plus active merchants who can invoice customers and receive payment by card. Fees range from 1.99 per cent plus Dh1 per transaction depending on payment method and location, such as online or via UAE mobile.
• Tap started in May 2013 in Kuwait, allowing Middle East businesses to bill, accept, receive and make payments online “easier, faster and smoother” via goSell and goCollect. It supports more than 10,000 merchants. Monthly fees range from US$65-100, plus card charges of 2.75-3.75 per cent and Dh1.2 per sale.
• 2checkout’s “all-in-one payment gateway and merchant account” accepts payments in 200-plus markets for 2.4-3.9 per cent, plus a Dh1.2-Dh1.8 currency conversion charge. The US provider processes online shop and mobile transactions and has 17,000-plus active digital commerce users.
• PayPal is probably the best-known online goods payment method - usually used for eBay purchases - but can be used to receive funds, providing everyone’s signed up. Costs from 2.9 per cent plus Dh1.2 per transaction.

Weather warnings show that Storm Eunice is soon to make landfall. The videographer and I are scrambling to return to the other side of the Channel before it does. Mia Man’s tips for fermentation
- Start with a simple recipe such as yogurt or sauerkraut
- Keep your hands and kitchen tools clean. Sanitize knives, cutting boards, tongs and storage jars with boiling water before you start.
- Mold is bad: the colour pink is a sign of mold. If yogurt turns pink as it ferments, you need to discard it and start again. For kraut, if you remove the top leaves and see any sign of mold, you should discard the batch.
- Always use clean, closed, airtight lids and containers such as mason jars when fermenting yogurt and kraut. Keep the lid closed to prevent insects and contaminants from getting in.
