It’s all about fish at The Jazz Bar & Dining at the Hilton Abu Dhabi this month with organic being the order of the day.
The menu, which is available daily from 7pm until 10.30pm, has been specially designed by the hotel’s new executive chef Walter Miculan to show that the secret to good food lies in the freshness of the ingredients.
Starters include a choice of citrus-cured wild seabass served with an organic quinoa salad and a sesame ponzu dressing or organic salmon tartar with poached quail eggs, a mandarin fennel salad, and Yasa caviar.
The mains on offer include pan-seared wild seabass fillet placed delicately on a parsnip puree, and served a side of Romanesco broccoli, warm tomatoes and a chive emulsion or crispy-skin organic salmon steak with potato and turkey ham croquettes, and curried chickpea ragout.
The fish menu starts from Dh75 (excluding taxes) is available in addition to the restaurant’s a la carte menu and diners are entertained by the hotel band DNA who perform from 9.30 each evening from Sunday through Friday.
