Eight months after it teased a Dubai opening on Instagram, Caviar Kaspia will welcome guests to its Dubai International Financial Centre outpost from next month.
First opened in Paris almost a century ago, in 1927 – when it was the haunt of the who’s who of the fashion, art, literary and business swish set – the restaurant currently counts among its patrons Rihanna, Beyonce and Jay Z, Emily Ratajkowski and the Hadid and Kardashian sisters.
What's on the menu
Plenty of costly caviar, of course – from esturgeon blanc to Oscietra. These will be served with eggs, toast, pasta and the famed Kaspia baked potato.
The seafood restaurant is also known for its smoked fish dishes (think smoked salmon blinis), plus everything from king crab, crayfish and lobster medallion to pasta and risotto.
The dessert menu will bring the Parisian signature baba a la vodka, but Kaspia Dubai’s patissier also promises additions for the local menu, including a glitzing baked Alaska.
The interior
Caviar Kaspia Dubai will be open for lunch and dinner, and features indoor seating, plus a terrace, and separate lounge and bar areas.
The interior promises to meld the best of luxurious Franco-Russian decor, as in the original Parisian restaurant – think woodwork and warm tones, plus authentic Russian objets d’art.
The vibe
Caviar Kaspia Paris is known for its old-school charm, which attracts both couples and business guests alike, and the Dubai outpost will “embody the dynamism and excellence combining old-world elegance with a contemporary touch”, a statement released by the brand says.
The focus does not have to be only on the caviar, either. An extensive beverage list, plus roe-free dishes ensure that Caviar Kaspia Dubai will appeal to every taste.
Caviar Kaspia is at DIFC Gate Village Building 2, and will be open from noon to 1am Saturday to Wednesday, and noon to 2am on Thursday and Friday. The exact opening date is yet to be revealed.

Chef Nobu's advice for eating sushi
“One mistake people always make is adding extra wasabi. There is no need for this, because it should already be there between the rice and the fish.
“When eating nigiri, you must dip the fish – not the rice – in soy sauce, otherwise the rice will collapse. Also, don’t use too much soy sauce or it will make you thirsty. For sushi rolls, dip a little of the rice-covered roll lightly in soy sauce and eat in one bite.
“Chopsticks are acceptable, but really, I recommend using your fingers for sushi. Do use chopsticks for sashimi, though.
“The ginger should be eaten separately as a palette cleanser and used to clear the mouth when switching between different pieces of fish.”

WHAT IS GRAPHENE?
It was discovered in 2004, when Russian-born Manchester scientists Andrei Geim and Kostya Novoselov were experimenting with sticky tape and graphite, the material used as lead in pencils.
Placing the tape on the graphite and peeling it, they managed to rip off thin flakes of carbon. In the beginning they got flakes consisting of many layers of graphene. But when they repeated the process many times, the flakes got thinner.
By separating the graphite fragments repeatedly, they managed to create flakes that were just one atom thick. Their experiment led to graphene being isolated for the very first time.
In 2010, Geim and Novoselov were awarded the Nobel Prize for Physics.

• Founded in 2014, Telr is a payment aggregator and gateway with an office in Silicon Oasis. It’s e-commerce entry plan costs Dh349 monthly (plus VAT). QR codes direct customers to an online payment page and merchants can generate payments through messaging apps.
• Business Bay’s Pallapay claims 40,000-plus active merchants who can invoice customers and receive payment by card. Fees range from 1.99 per cent plus Dh1 per transaction depending on payment method and location, such as online or via UAE mobile.
• Tap started in May 2013 in Kuwait, allowing Middle East businesses to bill, accept, receive and make payments online “easier, faster and smoother” via goSell and goCollect. It supports more than 10,000 merchants. Monthly fees range from US$65-100, plus card charges of 2.75-3.75 per cent and Dh1.2 per sale.
• 2checkout’s “all-in-one payment gateway and merchant account” accepts payments in 200-plus markets for 2.4-3.9 per cent, plus a Dh1.2-Dh1.8 currency conversion charge. The US provider processes online shop and mobile transactions and has 17,000-plus active digital commerce users.
• PayPal is probably the best-known online goods payment method - usually used for eBay purchases - but can be used to receive funds, providing everyone’s signed up. Costs from 2.9 per cent plus Dh1.2 per transaction.
