Hamid Merati-Kashani, a perfumer, says inspiration can strike at any time - at breakfast or at a crowded dinner space in a mall. Based in Dubai, he works at Firmenich, an international producer of perfume in the DuBiotech free zone.

I wake up and take my time getting ready for office to enjoy the day. As a perfumer, you are always thinking of fragrances. Sometimes, having coffee in the morning, I am thinking of using the aroma in my next perfume.
9am
I get to office in DuBiotech near Arabian Ranches. I talk with my small team of seven people and hold daily team meetings, discuss our projects, and which clients we have to visit. Based on that I start working on my fragrances. Currently, I am working on 40 projects with requests from companies in France, New York and Brazil. There are surprises almost every day. Just by chance you create a fragrance and they might like it. Creating a fragrance is a kind of mystery. I know by heart the raw materials and can imagine how they can smell. I work with fine fragrances. In the Emirates, I use French fragrances but with a touch of Arabia such as rose oil, oud and zafran. I came two years ago to Dubai and I feel like I am at home in Iran.

I have lunch with our managing director sometimes, and we can discuss work. Or with my salespeople or my assistant to discuss raw materials. There are so many nationalities here, and I try to taste and discover different food. Indian food has different spices and Arabic food [has] others. Cumin as a combination in fragrances make for good masculine aroma.
2pm
During the afternoon, I receive all my creations I created in the morning and asked my assistant to compound … in the lab. Each fragrance house has its own computer program, and I have my specific program in my laptop. I can work on the fragrances wherever I am and send it via the internet.
6pm
I usually get off work around this time, but sometimes I stay long, until 8 and 9pm. When I go home I continue in the mood to create fragrances.
9pm
Most of the time, I have friends coming … for dinner. I like to go to the Mall of the Emirates or Dubai Mall, where I can see people and smell and eat. I like to see the colour of the clothes, or the moods of the people, happy or sad. Sometimes I am at home watching news. But I make it a point never to eat garlic during the week.

Sometimes I am up with clients talking projects. I try to stop thinking about job after office, but my job is my hobby. I was collecting miniature perfume bottles as a child. I have around 2,000 examples.

It's time to go to sleep.
